Ingredients

    • 1 lb. fresh beets
    • 10 hard-boiled eggs
    • 2 cups cider vinegar
    • 2 cups water
    • Salt and pepper to taste

Directions

    1. Wash beets.
    2. Cook in water for 30 minutes.
    3. Peel beets and cut into slices.
    4. Mix all ingredients in a glass jar.
    5. Keep refrigerated.
