Oven Roasted Turkey Breast

Total time: 1-1/2 to 2 hours


    • 2 lb. Turkey Breast, skin-on, boneless
    • ½ tsp. fresh Italian parsley
    • ½ tsp. fresh thyme
    • ½ tsp. fresh oregano
    • ½ tsp. fresh chives   
    • ¼ tsp. fresh tarragon
    • ½ tsp. fresh basil
    • 1 tsp. fresh garlic
    • 1 tb. extra virgin olive oil
    • ¼ tsp. salt and pepper mix


    1. Preheat oven to 350° F.
    2. Wash fresh produce and pat dry. Roughly chop herbs together.
    3. Peel and mince garlic, and combine with herbs, salt and pepper and 1 tbsp. of olive oil to make marinade.
    4. Rub marinade onto the turkey breast and place it skin side up on a shallow roasting pan giving enough room for each portion to cook evenly.
    5. Wash your hands thoroughly after handling the turkey breast.
    6. Place into oven and cook until the skin is golden brown and slightly crisp, approximately 1½ to 2 hours. Internal temperature of turkey should be taken; turkey is done when the internal temperature reaches 165° F.
    7. Once turkey is done cooking remove from oven and allow it to rest for 15 minutes before carving.
