Mashed Cauliflower

    • 1 head of cauliflower
    • 3 tb. skim milk
    • 1 tb. olive oil
    • 2 tb. light sour cream
    • 1 garlic clove, minced
    • Freshly ground black pepper, to taste
    • Snipped chives, to taste


    1. Separate the cauliflower into florets and chop the core finely.
    2. Bring 1 cup of water to a simmer in a pot. Add cauliflower, cover and turn the heat to medium. Cook for 12 to 15 minutes, or until very tender.
    3. Drain and discard all the water (make sure the cauliflower is as dry as possible). Add milk, olive oil, sour cream, garlic, and salt and pepper. Mash with a masher until smooth. Top with chives.
