June 20, 2008: Hospital Food Goes Green: Pleasing Patients and Helping Them Heal
Despite research that indicates that fresh, well-prepared food is packed with natural disease-fighting nutrients to speed healing and prevent illness, many hospitals do not choose to make the investment in food that is fresh or healthy. However, nutrition experts like Carolyn Lammersfeld, director of nutrition at Cancer Treatment Centers of America (CTCA) and select doctors, hospital administrators, food service companies and patient advocates are working together to make hospital food healthier, better-tasting and a key part of the healing process.
Hospitals like CTCA who have improved their food service have noticed that the extra cost is worth it. Since good nutrition is such an integral part to the healing process, the benefits to patients are worth every penny of the cost.
