Zucchini and Tomato Gratin

Ingredients

  • 1 tb. olive oil
  • 2 cloves crushed garlic
  • 2 tsp. chopped onion
  • 2 sprigs chopped basil
  • ½ cup uncooked brown rice
  • ¾ cup water
  • 2 small zucchini
  • 4 medium tomatoes
  • 1 Pinch, salt and pepper
  • Asiago cheese

Directions

  1. Preheat oven to 375° F.
  2. Crush garlic, chop onions, remove stems and roughly chop basil leaves, slice zucchini (approximately ¼ inch thick), and slice tomatoes (approximately ½ inch thick).
  3. Heat olive oil to cast iron skillet.
  4. Add garlic, onion and basil to oil and saute for 1-2 minutes until fragrant.
  5. Add rice and water. Bring to a simmer.
  6. Turn off heat and layer zucchini and tomato over rice.
  7. Add a pinch of salt and pepper
  8. Bake 20 minutes.
  9. Preheat broiler.
  10. Grate ½ cup of Asiago cheese over top, broil until golden brown. Serve at once.
