Zucchini and Tomato Gratin Share on Twitter Share on Facebook Pin on Pinterest Email Print Ingredients 1 tb. olive oil 2 cloves crushed garlic 2 tsp. chopped onion 2 sprigs chopped basil ½ cup uncooked brown rice ¾ cup water 2 small zucchini 4 medium tomatoes 1 Pinch, salt and pepper Asiago cheese Directions Preheat oven to 375° F. Crush garlic, chop onions, remove stems and roughly chop basil leaves, slice zucchini (approximately ¼ inch thick), and slice tomatoes (approximately ½ inch thick). Heat olive oil to cast iron skillet. Add garlic, onion and basil to oil and saute for 1-2 minutes until fragrant. Add rice and water. Bring to a simmer. Turn off heat and layer zucchini and tomato over rice. Add a pinch of salt and pepper Bake 20 minutes. Preheat broiler. Grate ½ cup of Asiago cheese over top, broil until golden brown. Serve at once.
